做法






选材:东阿阿胶,福牌阿胶都是上选阿胶,好的阿胶用灯光照射下是透光的,劣质阿胶是不透光的,大家可以用这个方法检查一下自己买到的阿胶是否正品。还有就是查看阿胶的外观,气味和包装都是辨别真假的方法。


首先把阿胶砸碎,250克阿胶用250克的黄酒浸泡1-2天。



红枣、核桃、黑芝麻、枸杞、桂圆、老冰糖。


红枣减开去核。老冰糖尽量砸碎一点,这样可以减少熬煮时间。核桃如果大片可以掰成两半。



泡了1-2天后的阿胶连带浸泡的黄酒一起倒入陶瓷不粘锅里,再加入250克黄酒,小火熬煮至阿胶完全融化



再加入老冰糖,小火熬煮至融化



继续用小火熬煮至挂旗状态(浓稠半流动状态),关火。


再把所有剩下的材料(核桃、黑芝麻、枸杞、桂圆)加进去混合拌匀


这个时候就会发现阿胶糕是很拉丝的


放进模具里按压整形,整形后,待凉透后就可以切块了,大小形状随意



储存方式


1. 密封袋子一块块装起来用机封方式塑封起来,可以常温保存2-3个月,冰箱冷藏保存6-12个月。(这个属于销售的包装保存方式)


2. 用密封袋子或者盒子直接全部装起来,把封口收好即可,不一定要机封口类型,反正能密封起来就可以,放冰箱冷藏保存6-12个月。(这个属于一般家庭保存方式)


制作贴士


熬煮过程一定要有耐心,一定要小火慢煮,一边熬煮一边要不停地搅拌,小锅熬煮一般至少也要40-60分钟,建议阿胶一定要浸泡至少24小时以上才可以拿出来熬煮哦!!
