Chinese hot pot, aka huǒ guō (火锅), is as much of a dish as it is an experience. It’s a warm, comforting, interactive, and glorious communal feast that can be easily prepared and enjoyed with a close-knit group of family or friends at home.
There are many regional takes on hot pot throughout China. They vary based on the broth, meats, and dipping sauces used. In northern China, where the climate is colder, lamb is often a common choice. In southern China, where the climate is warmer, there is an abundance of seafood, shrimp, fish, oysters, and squid, which are popular ingredients to use in dishes. One of the most famous types of spicy hot pot comes from Chongqing with the use of Sichuan peppercorns and other mouth-numbing ingredients.
The next time you’re craving an easy and delicious meal or hosting a dinner party, try a Chinese hot pot. Have your guests sit around a simmering pot of soup placed at the center of the table. They can add into the pot whatever raw ingredients they like, from meat, vegetables, tofu, to seafood (all in thin slices or small pieces for easy cooking). Retrieve the cooked food items with wire ladles and flavor with dipping sauces of their choice.
