上海街边小吃之油墩子
油墩子一般都是下午在弄堂口开张,放上一只煤炉,上面支一口小铁锅,锅内是冒着热气的食油,旁边放着一大盆稀面糊和一大盆拌了葱花的萝卜丝。卖油墩子的人舀一勺面糊,倒入椭圆形铁制模子晃匀,然后放入葱花萝卜丝,再舀一勺面糊铺在萝卜丝上面,随后放入油锅中烹炸。这种物美价廉的美食,外脆里嫩,油而不腻,人见人爱,老一辈的上海人把油墩子当作下午的点心。
