流心芝士挞
今天来做个网红甜点---流心芝士挞,说实话,我也是第一次尝试。觉得馅料做法蛮新奇的,重要的是,“流心”这两个字吸引了我的眼线,很喜欢一口咬下去然后馅料在口腔流出来的感觉……虽然大半夜吃会有罪恶感,但是我实在忍不住要动手了😋

75克半软化的黄油➕30克糖➕少许盐,用搅拌机搅拌至黄油微白

10克全蛋液分三次加入搅拌均匀

加入125g面粉搓成面团

用保鲜膜包好放冰箱冷藏一小时

187克奶油奶酪隔水加热

加入45克糖搅拌均匀

加入75克淡奶油、23克牛奶搅拌均匀

加入4克朗姆酒、3克柠檬汁搅拌均匀

把面团从冰箱拿出来,擀好、用杯子盖出符合模具大小的挞皮,放模具后用叉子扎孔;放烤箱里355华氏度烤10分钟

待挞皮摊凉后,放入馅料,再放入冰箱冷藏至馅料成半固体状;挞皮刷水,馅料刷一层蛋黄;400华氏度烤10分钟。
真的有流心!喜欢奶油奶酪那种有一点点酸的感觉,可以试一试这个。
