Instructions
1. Cooking Rice Noodles: Place the rice noodles in cold water, bring to a boil, then simmer over low heat for 8-11 minutes until reaching your desired texture. Remove from the water and drain for later use.
2. Soup Preparation: In a separate pot, add 320ml-360ml of cold water and combine Guizhou sour red soup, fragrant large bone broth, and lotus root with celery. Bring to a boil, then add the cooked rice noodles. Finally, add the diced soft and chewy powder, simmer for 1 minute, and it's ready to be served.
3. Prepare the Dipping Sauce: In a small bowl, mix 1 spoon of ground chili paste with 2 spoons of sour soup and 3 drops of litsea pungens oil for a versatile dipping sauce.
Friendly Reminders:
1. Adjust the sourness level of the soup to your preference; using 320ml water results in a richer flavor, while 360ml provides a lighter taste.
2. The ground chili paste and litsea pungens oil are for the dipping sauce and should not be directly added to the soup.
3. When preparing the dipping sauce, if trying the chili paste for the first time, it's recommended to add a small amount.
