Golden plum 镇江香醋. In 1985, it won the gold medal of the French Food Expo. It is mellow and fragrant, from small to large balsamic vinegar.
镇江香醋 is one of the four famous vinegars in China. The main raw material is glutinous rice, which is a local traditional specialty in Zhenjiang, Jiangsu. It is softer and more fragrant than aged vinegar.
This year, I used balsamic vinegar to make Laba Garlic, and the color was very beautiful. It's fragrant and tangy, and it's really beautiful to have a plate when eating dumplings.
The Laba garlic made with mature vinegar last year has a darker color and a more sour taste than the balsamic vinegar. It is also delicious.
