【The Divine Dish】 Roasted Chilli Sauce Sea Bass Recipe
Ingredients: Bass, green onion, ginger, garlic, chili, Sichuan peppercorns, roasted chili sauce, salt, white pepper powder
Steps:
1. Add slightly more oil to the pan, then add green onion, ginger, garlic, chili, and Sichuan peppercorns to simmer over low heat to create flavored oil
2. Debone the bass, season with salt and white pepper, and marinate for 10 minutes
3. Poach the fish pieces in the remaining flavored oil at low temperature for about 3 minutes
4. Plate the dish, add 2 spoonfuls of roasted chili sauce on top of the fish, and serve with a small amount of knife-cut chilies or chili water for dipping
