New Year's Eve | Homemade Easy Cantonese Roast Duck
I have been greedy for roasting goose for the past two days, but I can’t buy goose here, so I have to make roasted duck myself!
I bought the duck from hmart. When I bought it, I scalded the skin of the duck with boiling water, and plucked the duck feathers as much as possible... (Dahua's ducks have a lot of duck feathers, so hmart will be better)
The duck was marinated for a day and a night. I added rose wine, fermented bean curd, five-spice powder, Zhuhou sauce, maltose, salt, sesame oil, minced garlic and ginger to the seasoning. Both the inside and the outside, and I put gloves on between the flesh and the skin.
I put the duck on the red wine bottle, let it dry in the vent (so that the skin can dry out and become crispy after roasting), and apply a mixture of white vinegar and sugar every half day. (Dry it for a day, or you can also use an electric fan to blow it to shorten the time)
Fill the skin and meat with air before roasting. Preheat the oven to 450F and determine the roasting time according to the size of the duck. (Pay attention to wrapping the duck wings and joints with tin foil to prevent burning)

年夜饭 | 自制家庭简易广式烧鸭
这两天馋烧鹅馋的不行然而这边买不到鹅只能自己做烧鸭了!
鸭子我在hmart买的,买回来先用开水烫鸭子的皮,把鸭毛跟尽量拔干净…(大华的鸭子就是鸭毛特别多,hmart会好一点)
鸭子腌制一天一夜,调料里我加了玫瑰露酒,腐乳汁,五香粉,柱侯酱,麦芽糖,盐,香油,蒜蓉姜末。内里和外层都涂,我戴着手套在肉和皮的夹缝里也抹上了。
我把鸭子插在红酒瓶上,放通风口晾晒(为了皮能风干,烤完能变脆一点),每半天涂白醋和糖的混合物。(晾了一天,或者也能用电风扇对着吹,缩短时间)
烤之前对着皮和肉中间填气。烤箱预热450F,根据鸭子大小决定烤制时间。(注意在鸭翅和关节处进行包上锡纸以防烤焦)
