These Authentic Luo Si Fen Liuzhou Snail Rice Noodles from Ziqi Li are her take on the bestselling Chinese soup made from stewed river snails. Flavorful and known for its distinctive smell, these noodles are not only delicious, they're healthy too. They take just 10 minutes to cook, and taste spicy and sour.
Instructions
1. Bring water to a boil and cook cookes for 8-10 minutes (add a few drops of vinegar to the water for extra-chewy noodles).
2. In a new pot, boil 1 3/4 cups (400ml) of water, add the cooked noodles, the soup base.
3. Turn off the heat when the water is boiling.
4. Add the rest of the ingredients, mix well, and serve.
Optional: Add chili oil to taste.
Alternative: For dry noodles, skip step number 2, and add all ingredients to the freshly cooked, drained noodles.
