Zhangping Shuixian 漳平水仙, a distinctive and celebrated product of Zhangping City in Fujian Province, stands as a rare form of tightly compressed tea within the oolong category. Unlike its more widely known oolong counterparts, Zhangping Shuixian, while less famous, deserves recognition from a broader audience of tea enthusiasts for its unique craftsmanship and captivating flavor profile. As a member of the illustrious oolong tea family, Zhangping Shuixian has not been extensively documented in various tea encyclopedias and buying guides, making it a "hidden gem" cherished by seasoned tea lovers. This Zhangping Shuixian tea cake, offered by the Chinese Tea Alliance, has not compromised on quality despite its niche status. Instead, it has been meticulously selected through repeated horizontal evaluations of over a dozen high-quality samples, aiming to provide tea connoisseurs familiar with the four major oolongs an experience that is both stunning and novel.
This tea cake is crafted from the fresh leaves of the large-leaf Shuixian tea cultivar, harvested at the semi-open leaf stage from high mountains exceeding 800 meters in elevation in Zhongcun 中村, Shuangyang Town 双洋镇, Zhangping City. Zhongcun is not only the birthplace of Zhangping Shuixian tea cakes but also its core production area. Nestled in a long and narrow valley, it boasts a typical ecological environment conducive to producing exceptional tea, characterized by lingering mist and clouds, clear streams, and lush forests. The tall trees provide shade and wind protection for the Shuixian tea bushes, while the diffused light created by the mist promotes the accumulation of amino acids, proteins, and other nutritional components. The loose, well-aerated soil and thick layer of humus offer ample nutrients, laying a solid foundation for the tea's aroma and taste.
The entire production process meticulously adheres to the traditional Southern Fujian oolong deep fermentation techniques that have been practiced since the 1980s. It involves over twenty intricate steps, including sun-withering, indoor-withering, five rounds of shaking, pot-fermentation, kill-green, kneading, hand-pressing, and slow-baking over lychee wood charcoal. The overnight tea-making process, extending from 5 PM to 3-5 AM, demands immense physical stamina, experience, and patience from the tea masters. The finished tea cakes are square and pillow-shaped, exhibiting a dark brown hue with a sandy green undertone and oily red edges. They are moderately compressed, compact, and charming, with each cake designed for a single brewing session, making them convenient for both carrying and collecting. The tea infusion is as bright and golden as yellow crystal, exuding a rich and complex aroma with multiple layers of fragrance: a top note of delicate orchid and fresh tenderness, a middle note interweaving nectar, fruit, and milky undertones, and a base note carrying a sharp osmanthus fragrance. Upon tasting, it delivers a rich, mellow, and refreshing mouthfeel with a smooth and gentle texture and a strong, sweet aftertaste. The tea's energy is vibrant, offering a sense of well-being. Its mild nature makes it suitable for all ages, and it can withstand over twenty infusions, making it a truly exceptional oolong tea worthy of careful appreciation and collection.
