Instructions
1. Around 350 grams of chicken thigh meat, diced into small pieces, a moderate amount of shallots (or onions) cut into chunks, peeled garlic; coriander and spring onions cut into thumb-length pieces for later use.
2. Pat dry the surface of the chicken meat, heat oil in a pan, fry the chicken until golden on both sides, then stir-fry evenly with the sauce in the pan and set aside.
3. In another pot (preferably a clay pot), pour the remaining oil from frying the meat, stir-fry the shallots and garlic until fragrant, lay the chicken on top, cover and simmer on medium heat for 2-3 minutes, sprinkle with spring onions and coriander, mix well before serving.
