This is a rich soy sauce soup topped with back fat granules. Inspired by Onomichi-style ramen, it is simmered with chicken bones, pork bones, vegetables, as well as fresh and dried sardines. The seasoned oil is blended with animal fat, aromatic vegetable oil and chicken oil, allowing you to fully savour the sweet taste and rich flavour of the back fat.
