【Kayano-ya Chicken Stock】 This stock is crafted using Japanese-produced smoked chicken. We combine the savory richness of chicken with the umami of scallops, adding aromatic vegetables like ginger and scallions to create a unique flavor profile with a distinctively Chinese flair.
【Gentle Chinese-style dishes made with mild chicken stock】 It is ideal for egg drop soup, stir-fried seasonal vegetables, stir-fried glass noodles, and dishes with thickened sauces. This chicken stock is a versatile kitchen essential—offering a flavor that is both refreshing and complex. Kayano-ya’s carefully blended chicken stock significantly enhances the umami of various dishes. Surprisingly, it pairs beautifully with rich (sauce-heavy) or spicy Chinese dishes. Adding it to recipes that typically do not call for stock allows you to reduce the amount of other seasonings, resulting in a milder, more balanced flavor.
【Capturing the umami of smoked chicken】 We use Japanese-produced smoked chicken as the primary ingredient. The savory essence of the chicken infuses the stock, creating a rich, deep flavor. The smoked chicken is thinly sliced and ground into a powder—a process similar to making *katsuobushi* (dried bonito flakes). Although the process is labor-intensive, smoking concentrates the chicken's umami, adding remarkable depth to the base. Building upon this rich smoked chicken foundation, we incorporate scallops and aromatics like scallions and ginger. The final result is a stock that retains the elegant qualities of chicken broth while delivering a distinctive Chinese flavor profile.
